Cottage Cheese Fluff

A classic dessert adapted with sugar free ingredients to make it more friendly for those of us with tiny tummies!

Cottage cheese is one of those foods that you either love it or you hate it. I'm a lover - I've always liked it on a green salad for protein, and I love adding herbs and spices to it to make it savory! I love it on its own and one of my favorite quick breakfasts is one of those Breakstone or Daisy cottage cheese cups with the fruit on top.


When I first saw a recipe for this Cottage Cheese Fluff, I knew I had to try it. The recipe I found was based on full fat ingredients and lots of added sugar. I adapted that recipe to make this bariatric friendly version, using sugar free gelatin and sugar free whipped topping.


This is seriously so easy to throw together, and my picky kids even loved it. We've tried it with strawberry gelatin and strawberries, and that was good too, but I always go back to the original version with the pineapple and the mandarin oranges. It reminds me a lot of a dessert that my late grandmother made called Heavenly Delight, which was made with white rice, whipped heavy cream, pineapples and maraschino cherries. I may try adding the cherries the next time I make this!
