Bariatric Confetti Chicken Chili



I'm on a chili kick in the kitchen this week! This white chicken chili was a favorite of mine in my Weight Watchers days way back before my surgery. I recently pulled out my paperwork from WW and even signed up online for their free one month trial and started using the Green plan as a way to keep my eating under control. I love that the program now focuses more on whole wellness rather than just weight loss.


You're probably wondering why I'd pay for a WW subscription after having weight loss surgery. Remember that the surgery is just a tool, just like WW is just a tool. Neither is a cure all, you have to find what works for you and currently the WW program is keeping me in check and getting my eating habits back on track. I love all the recipe and food ideas and the app is amazing for me as a meal planner!


Back to the chili. So this one has two cans of white beans added. If you read my post the other day, you know I tend to stick with beanless chili because of the bloating I experience from beans. I've talked to some other bariatric patients and not everyone has this issue, so I thought I'd add this recipe here in case you are a bean lover! I do not recommend omitting these from the recipe for a beanless chili, though. There isn't much sustenance in this chili otherwise, and the beans really give it the body it needs to make a meal.


I also changed this up a bit by adding some fresh jalapeno peppers and Tastefully Simple Cha Cha Chili Lime Seasoning. I have a TON of TS products and I love them all! The spices are so great for incorporating into all kinds of recipes. I especially love using the chili lime seasoning in Mexican style dishes and it worked perfectly in this chili.


Add some low fat sour cream, a few sliced green onions, and a squeeze of fresh lime juice for a great meal!
