Grilled Summer Veggies with Balsamic and Roasted Onion

Fresh summer flavors made on the grill with a kick-butt seasoning - winner!

Can I just say how much I love fresh vegetables? It's incredibly joyful for me when I grow my own veggies in my garden, harvest them, and find new ways to enjoy them, especially when the entire family gets on board and eats it up!


Zucchini and yellow squash are starting to come in like mad, and I had a few that needed used ASAP. A few years back, I jumped on the zucchini boat bandwagon and used to make sausage, onion, pepper, and marinara stuffed squash nearly once a week. Now that there's two of us with limited capacity in our stomachs, it's tough to make those as often because it makes so much, and since my youngest is super picky and only six years old, I'd really only be making one stuffed zucchini for all four of us.


I had some baby portabella mushrooms and Brussels sprouts on hand that I wanted to use up as well, so I washed everything up and got chopping. Am I the only one that just loves cutting up vegetables? Something about it is so therapeutic! The zuccs and yellow squash I cut longways twice to make triangle shaped quarters, then cut those into 1/2" thick slices. The mushrooms I left whole unless they were pretty large, those I cut in half. And the Brussels sprouts I just trimmed the ends and then cut in half.


All of this was tossed into a bowl with some extra light virgin olive oil and the star of the show - Urban Accents Veggie Roasters - Balsamic and Roasted Onion Seasoning Blend. You guys. Run, don't walk, and get yourself some of this stuff! We all tore into this like it was our last meal, even the six year old. It. Was. Ah-mazing! So much flavor, so much payoff, so little effort!


You're going to need a good grill basket to use for this. I love the Kona Vegetable Grill Basket from Amazon. It's porcelain enamel coated and it's so easy to clean. It's the perfect size for holding everything in and not letting anything drop through the holes!


We served this with thin-sliced Citrus Herb Marinated Chicken Breasts and it made a complete meal for us. It was the perfect dinner for a hazy summer day. Enjoy!
